Ingredients

1 cup all-purpose flour

½ cup rolled oats

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened to room temperature

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup mini chocolate chips

½ cup colorful sprinkles (for a fun touch)

½ cup chopped nuts (optional: walnuts or pecans)

Mini muffin liners (for serving)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). While the oven warms up, line a mini muffin tin with mini muffin liners to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, rolled oats, baking soda, and salt until well combined. Set this mixture aside for later use.

Cream Butter and Sugars: In a separate bowl, beat the softened butter using a hand mixer or stand mixer on medium speed. Add in the packed brown sugar and granulated sugar, continuing to mix until the mixture is light and fluffy. This should take approximately 2-3 minutes.

Add Egg and Vanilla: Once creamy, add the egg and vanilla extract to the butter and sugar mixture. Mix until everything is fully incorporated.

Combine Mixtures: Gradually add the reserved dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Incorporate Add-ins: Gently fold in the mini chocolate chips, colorful sprinkles, and, if using, the chopped nuts until they are evenly distributed throughout the batter.

Fill Muffin Tins: Using a spoon or a small cookie scoop, carefully fill each mini muffin liner about three-quarters full with the batter to allow room for rising.

Bake: Place the muffin tin in your preheated oven and bake for 10-12 minutes. They are done when the edges are golden, and a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffin tin from the oven and let the mini treats cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Serve and Enjoy: After cooling, these delightful mini treats can be packed in lunchboxes, shared with friends, or savored as a quick after-school snack!
