Mini Lasagna Pepper Boats

4 medium bell peppers (choose red, yellow, or green; tops cut off and seeds removed)

1 pound ground beef or Italian sausage

1 cup ricotta cheese

1 cup marinara sauce (plus extra for serving)

1 cup shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese (divided)

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Filling: In a large skillet over medium heat, cook the ground beef or Italian sausage until it's nicely browned. Make sure to drain any excess fat. Next, stir in the marinara sauce along with the Italian seasoning, garlic powder, salt, and pepper. Allow the mixture to simmer for about 5 minutes to blend the flavors.

      Make the Cheese Mixture: In a separate bowl, combine the ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan. Season this mixture with a pinch of salt and pepper, then mix until completely blended.

        Stuff the Peppers: Arrange the prepared bell peppers upright in a baking dish. Begin by spooning a hearty layer of the meat sauce into each pepper until they're about halfway filled. Follow with a layer of the ricotta cheese mixture, pressing it down slightly to pack it in. Then, add another layer of the meat sauce on top of the cheese mixture. Finally, crown each pepper with the remaining mozzarella and Parmesan cheeses.

          Bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After this time, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese on top is bubbly and has turned a golden brown.

            Let Cool & Serve: Once baked, remove the stuffed peppers from the oven and allow them to cool for a few minutes. If desired, garnish with fresh basil leaves for a pop of color. Serve along with extra marinara sauce on the side for dipping.
