2 large eggs

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 cup marinara sauce (plus extra for serving)

1 tsp Italian seasoning

1/2 tsp garlic powder

Salt and freshly ground pepper, to taste

Fresh basil or parsley, for garnish (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a muffin tin or place muffin liners in each cup to prevent sticking.

    Cook the Spaghetti: In a spacious pot, bring a generous amount of salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until al dente. Drain well and allow it to cool slightly.

      Combine the Ingredients: In a large mixing bowl, combine the slightly cooled spaghetti with the eggs, ricotta cheese, half of the shredded mozzarella, grated Parmesan cheese, marinara sauce, Italian seasoning, garlic powder, and a good pinch of salt and pepper. Mix everything thoroughly until the spaghetti is evenly coated in the cheesy mixture.

        Fill the Muffin Tin: Spoon the spaghetti mixture into each muffin cup, filling them about three-quarters full. Press down gently to help the muffins hold their shape while baking.
