Ingredients

24 Oreo cookies, crushed (plus an additional 6 for topping)

½ cup unsalted butter, melted

1 cup cream cheese, softened to room temperature

1 cup powdered sugar

½ teaspoon vanilla extract

1 cup whipped cream (homemade or store-bought)

1 cup chocolate chips (choose dark or milk chocolate for drizzling)

Instructions

Prepare the Pan: Begin by lining an 8x8-inch square baking pan with parchment paper, ensuring you leave some parchment overhanging on the sides for easy removal later.

Make the Base: In a large mixing bowl, combine the crushed Oreo cookies with the melted butter. Mix well until all the cookie crumbs are fully coated with butter. Press this mixture firmly and evenly into the bottom of the prepared pan, forming a solid crust. Then, place the pan in the refrigerator to chill and set while you prepare the filling.

Prepare the Filling: In a separate bowl, use an electric mixer to beat the softened cream cheese until it is smooth and creamy. Gradually add the powdered sugar and vanilla extract, continuing to mix until the mixture is completely blended and smooth.

Fold in Whipped Cream: Carefully fold the whipped cream into the cream cheese mixture. Use a spatula or a rubber scraper to gently combine until no streaks of whipped cream remain, resulting in a light and fluffy filling.

Assemble the Bars: Once the Oreo crust has set, pour the cream cheese filling over the chilled crust. Use a spatula to spread it evenly across the top, smoothing out the surface.

Add the Topping: Take the remaining 6 Oreo cookies and crush them into small chunks. Sprinkle these cookie crumbs generously over the cream cheese filling, adding delicious texture and crunch to the top.

Chill: Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours to allow the bars to set fully.

Chocolate Drizzle: After the bars have set, melt the chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until the chocolate is completely smooth. Once melted, drizzle the chocolate over the top of the bars in a decorative fashion.

Slice and Serve: Use the parchment paper overhang to lift the bars out of the pan. With a sharp knife, cut into squares and enjoy your deliciously delightful no-bake Oreo bars!
