1 cup crushed graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup unsalted butter, melted

1/4 cup granulated sugar

1 can (20 oz) crushed pineapple, well-drained

1 cup cream cheese, softened to room temperature

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

1/2 cup whipped cream (or Cool Whip)
