8 oz (about 2 cups) fusilli or penne pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (red, yellow, or orange), diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Pasta: In a large pot, bring water to a rolling boil and add a generous amount of salt. Once boiling, introduce the pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. After cooking, drain the pasta in a colander and rinse thoroughly under cold running water to halt the cooking process. Allow the pasta to cool completely in the colander.

    Prepare the Vegetables: While the pasta is cooling, wash and chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces for the salad. Set aside in a large mixing bowl.

      Mix the Dressing: In a separate small mixing bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper. Whisk until the mixture is emulsified and well combined.
