2 ripe peaches, thinly sliced

1 cup fresh spinach leaves

1/2 cup crumbled feta cheese

1/4 cup roasted almonds, roughly chopped

2 tablespoons honey

1 tablespoon freshly squeezed lime juice

1 teaspoon chili powder

Prepare the Peaches: In a medium mixing bowl, combine the thinly sliced peaches with honey, lime juice, chili powder, and a pinch of salt and pepper. Gently toss the mixture until the peach slices are evenly coated in the marinade. Let it sit for about 10 minutes to allow the flavors to meld beautifully.

    Toast the Tortillas: Warm a skillet over medium heat. One at a time, place each tortilla in the skillet and toast for approximately 30 seconds on each side, or until they are warm and slightly pliable. Once toasted, remove them from the skillet and set aside.

      Assemble the Wraps: On a clean countertop, lay each warmed tortilla flat. Begin by placing a generous layer of fresh spinach leaves at the center of each tortilla. Next, add a portion of the marinated peach slices, followed by a sprinkle of crumbled feta cheese, and finish with a handful of chopped roasted almonds.

        Wrap It Up: To wrap, fold in the sides of the tortilla over the filling, then roll it tightly from the bottom to the top, ensuring all the delicious ingredients are neatly tucked inside. Repeat the wrapping process for the remaining tortillas.
