Roasted Garlic and Parmesan Orzo Bowls

1 cup orzo pasta

1 head of garlic

2 tablespoons olive oil, divided

Salt and black pepper, to taste

1 cup vegetable broth

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese, plus extra for serving

1 tablespoon lemon juice

Fresh basil leaves, for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice about 1/4 inch off the top of the garlic head to expose the individual cloves. Place the garlic on a piece of aluminum foil, drizzle 1 tablespoon of olive oil over it, and wrap it tightly in the foil. Roast in the oven for 30-35 minutes or until the garlic is golden and tender to the touch. Once roasted, allow it to cool slightly before squeezing the cloves out of their skins into a bowl. Mash the roasted garlic with a fork and set aside.

    Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil over medium-high heat. Add the orzo pasta and cook according to the package instructions, typically about 8-10 minutes, until it reaches an al dente texture. Once cooked, drain the orzo and set aside.

      Sauté the Ingredients: Heat a large skillet over medium heat and add the remaining 1 tablespoon of olive oil. Once the oil is shimmering, add in the chopped spinach and halved cherry tomatoes. Sauté the mixture for about 2-3 minutes, stirring occasionally, until the spinach has wilted and the tomatoes become slightly softened.

        Combine Everything: Lower the heat in the skillet and add the drained orzo along with the mashed roasted garlic. Gently fold in the grated Parmesan cheese and lemon juice, stirring until everything is well combined and the cheese begins to melt into a creamy sauce. Season with salt and black pepper to taste.
