4 boneless, skinless chicken breasts

1 cup roasted red peppers, chopped (jarred or homemade)

1 cup shredded mozzarella cheese

1 cup ricotta cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup fresh parsley, chopped (for garnish)

1/2 teaspoon crushed red pepper flakes (optional, for an added spicy kick)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Make sure to give your oven enough time to reach the desired temperature.

    Prepare the Baking Dish: Take a 9x13 inch baking dish and lightly grease it with one tablespoon of olive oil. This will help prevent sticking.

      Sauté Garlic and Red Peppers: In a medium skillet over medium heat, add the remaining tablespoon of olive oil. Once the oil is hot, add the minced garlic and sauté for about 1 minute, or until it becomes fragrant. Next, stir in the chopped roasted red peppers and cook for an additional 2-3 minutes.
