Salmon Lettuce Wraps with Watermelon Glaze

For the Salmon:

1 lb fresh salmon fillet, skin-on

1 tablespoon olive oil

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

For the Watermelon Glaze:

2 cups fresh watermelon, diced

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger, grated

1 tablespoon soy sauce (or tamari for gluten-free)

For the Wraps:

1 head of butter or romaine lettuce, leaves separated and washed

1 cup shredded carrots

1 red bell pepper, julienned

1 avocado, sliced

Fresh cilantro or mint leaves, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Watermelon Glaze: In a medium saucepan over medium heat, combine the diced watermelon, honey, apple cider vinegar, grated ginger, and soy sauce. Allow the mixture to simmer for approximately 10 minutes, stirring occasionally, until the watermelon softens and the glaze thickens slightly. Once thickened, remove from heat and set aside to cool.

    Cook the Salmon: Preheat your grill or a stovetop skillet over medium-high heat. While the cooking surface heats, rub the skin-on salmon fillet with olive oil, then generously season with salt, black pepper, garlic powder, and smoked paprika. Once hot, place the salmon skin-side down on the grill or skillet.

      Grill the Salmon: Cook the salmon for about 4-5 minutes on each side. It’s ready when the internal temperature reaches 145°F (63°C) and it flakes easily with a fork. During the last few minutes of cooking, generously brush the watermelon glaze over the salmon for enhanced flavor. Once cooked, remove the salmon from heat and allow it to rest for a few minutes.

        Assemble the Wraps: While the salmon rests, prepare the lettuce leaves to create the wraps. For each lettuce leaf, place a generous spoonful of shredded carrots and a handful of julienned bell pepper in the center.

          Add Salmon and Avocado: Flake the rested salmon into bite-sized pieces and distribute it evenly on top of the vegetable mixture in each lettuce leaf. Place a few slices of avocado atop the salmon for added creaminess.

            Drizzle & Garnish: Drizzle additional watermelon glaze over the salmon in each wrap, and garnish with fresh cilantro or mint leaves for a pop of flavor.

              Serve: Serve the wraps immediately, accompanied by lime wedges for a refreshing squeeze of juice to brighten up the dish.
