Ingredients

For the shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and freshly cracked black pepper, to taste

8 small corn tortillas

For the cherry slaw:

2 cups red cabbage, finely shredded

1 cup fresh cherries, pitted and halved

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely sliced

Juice of 1 lime

2 tablespoons honey

Salt and pepper, to taste

For the additional toppings:

1 avocado, sliced

Lime wedges, for serving

Hot sauce (optional)

Instructions

Prepare the shrimp: In a medium mixing bowl, combine the olive oil, smoked paprika, garlic powder, ground cumin, salt, and freshly cracked black pepper. Add the peeled and deveined shrimp to the bowl, tossing them gently until they are evenly coated with the seasoning mixture. Allow the shrimp to marinate for approximately 15 minutes to absorb the flavors.

Make the cherry slaw: In a large mixing bowl, combine the finely shredded red cabbage, halved fresh cherries, chopped cilantro, and sliced red onion. In a separate small bowl, whisk together the juice of one lime, honey, and a pinch of salt and pepper until well combined. Drizzle this dressing over the slaw mixture, then toss everything together until evenly mixed. Set aside to let the flavors meld.

Cook the shrimp: Heat a large skillet over medium-high heat. Once the skillet is hot, add the marinated shrimp in a single layer. Cook the shrimp for about 2-3 minutes on one side without moving them, allowing them to develop a nice sear. Flip the shrimp and cook for an additional 2-3 minutes until they are pink, opaque, and cooked through. Remove the skillet from heat.

Warm the tortillas: In a separate dry skillet or directly over an open flame, warm the corn tortillas for about 30 seconds on each side, or until they become pliable and have slight char marks. Transfer the warmed tortillas to a kitchen towel and wrap them to keep warm.

Assemble the tacos: For each tortilla, place a few pieces of the cooked shrimp in the center. Top with a generous scoop of the cherry slaw, followed by slices of avocado. If you enjoy a little kick, drizzle with hot sauce to taste.

Serve: Enjoy these vibrant shrimp tacos immediately, accompanied by lime wedges for an extra zesty touch. Squeeze the lime juice over the tacos right before taking a bite for layers of flavor.
