1/2 teaspoon ground cumin

Salt and pepper, to taste

Juice of 1 lime

8 small corn or flour tortillas

For the Strawberry Slaw:

2 cups green cabbage, finely shredded

1 cup fresh strawberries, hulled and thinly sliced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

3 tablespoons apple cider vinegar

2 tablespoons honey

Salt and pepper, to taste

For Garnish:

Lime wedges

Extra chopped cilantro

Instructions

Preparation of the Shrimp: In a mixing bowl, combine the peeled and deveined shrimp with olive oil, chili powder, smoked paprika, garlic powder, ground cumin, lime juice, salt, and pepper. Toss well until all the shrimp are thoroughly coated in the spices and oil. Allow the marinated shrimp to sit for a minimum of 15 minutes to absorb the flavors.

Preparation of the Strawberry Slaw: While the shrimp marinates, prepare the slaw. In a large mixing bowl, combine the shredded cabbage, sliced strawberries, red onion, and chopped cilantro. In a separate small bowl, whisk together the apple cider vinegar, honey, salt, and pepper to create the dressing. Once mixed, pour the dressing over the slaw and toss gently to ensure everything is well-coated. Let the slaw sit for approximately 10 minutes to allow the flavors to blend.

Cooking the Shrimp: Heat a large skillet or grill pan over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on the first side until they turn lightly charred and pink. Flip the shrimp and continue to cook for an additional 1-2 minutes until fully cooked through. Once done, remove the shrimp from the heat.

Warming the Tortillas: In a dry skillet, warm each tortilla one at a time, cooking for about 30 seconds on each side until heated through and pliable. Keep them warm by covering with a clean kitchen towel until you're ready to serve.

Assembling the Tacos: On each warm tortilla, place a generous serving of the cooked shrimp, followed by a generous scoop of the strawberry slaw.

Serving: Garnish the tacos with fresh cilantro and offer lime wedges on the side for squeezing over the top. Enjoy your vibrant and zesty shrimp tacos, beautifully complemented by the sweetness of the strawberry slaw!
