4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup chopped bell peppers (any color)

1 cup fresh spinach leaves, chopped

1/2 cup sweet corn (canned or frozen, thawed)

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and black pepper, to taste

Olive oil or cooking spray (for cooking)

Optional: salsa, sour cream, or guacamole for serving

Prep the Veggies: In a large mixing bowl, combine the chopped bell peppers, spinach, and corn. Add the garlic powder, cumin, salt, and black pepper. Toss the ingredients together until they are evenly mixed and the veggies are well seasoned.

    Assemble the Quesadillas: Place two of the tortillas flat on a clean surface. Distribute half of the shredded cheese (both cheddar and mozzarella) evenly over each tortilla. Spoon a generous amount of the prepared veggie mixture over the cheese, then top with the remaining cheese. Finally, place another tortilla on top of each filled tortilla to create a sandwich.
