1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken or vegetable broth

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, diced

3 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 tablespoon Worcestershire sauce

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Prepare the Rice: Start by rinsing 1 cup of long-grain white rice under cold water until the water runs clear. This helps remove excess starch, ensuring fluffy rice. In a medium saucepan, combine the rinsed rice with 2 cups of chicken or vegetable broth. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes, or until the rice is tender and the liquid is fully absorbed. Fluff the rice with a fork and set it aside.

    Season the Shrimp: In a mixing bowl, add the peeled and deveined shrimp. Sprinkle with 2 tablespoons of Cajun seasoning, 1 tablespoon of Worcestershire sauce, and a pinch of salt and pepper. Toss the shrimp well to ensure they are evenly coated with the spices.
