Ingredients

2 cups mixed berries (fresh or frozen blueberries, raspberries, and blackberries)

1 cup granulated sugar, divided

1 tablespoon cornstarch

1 teaspoon chili powder (adjust for your desired spice level)

Zest and juice of 2 limes

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, melted

1 cup buttermilk

½ teaspoon cayenne pepper (optional, for added heat)

1 tablespoon coarse sugar (for topping)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by greasing it with cooking spray or butter for easy removal later.

Prepare the Berry Filling: In a large mixing bowl, toss together the mixed berries, ½ cup granulated sugar, cornstarch, chili powder, lime zest, lime juice, and vanilla extract. Gently mix until all berries are well-coated. Pour this berry mixture into the bottom of the greased baking dish, spreading it evenly.

Make the Cobbler Batter: In a separate bowl, whisk together the flour, the remaining ½ cup of sugar, baking powder, salt, and cayenne pepper (if using). Gradually add in the melted butter and buttermilk, stirring gently until just combined. The batter will be slightly lumpy, so take care not to overmix.

Pour the Batter: Carefully spoon the cobbler batter over the berry mixture in the baking dish. Aim to cover most of the berries; it’s okay if some are still visible.

Sprinkle Topping: Finish by evenly sprinkling the coarse sugar over the top of the batter. This will create a delightful sweet and crunchy crust as it bakes.

Bake: Transfer the baking dish into the preheated oven. Bake for 40-45 minutes, or until the top turns a lovely golden brown and a toothpick inserted into the batter comes out clean. You should see the berry filling bubbling around the edges.

Cool and Serve: Once baked, allow the cobbler to cool in the pan for about 15-20 minutes to set. Serve while warm on its own, or elevate the experience with a scoop of vanilla ice cream or a dollop of whipped cream.
