Ingredients

1 lb (450g) ground turkey

1/2 cup breadcrumbs

1/4 cup finely chopped green onions (plus extra for garnish)

1/4 cup grated carrot

2 cloves garlic, minced

1 inch fresh ginger, grated

1 large egg

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey

1 teaspoon salt

1/2 teaspoon black pepper

Cooking oil (for frying)

For the Sticky Honey Soy Sauce:

1/4 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

1 teaspoon cornstarch, mixed with 1 tablespoon water

Sesame seeds (for garnish)

Instructions

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, chopped green onions, grated carrot, minced garlic, grated ginger, egg, soy sauce, sesame oil, honey, salt, and black pepper. Use your hands to mix thoroughly until all ingredients are evenly combined.

Form the Meatballs: With your hands, take portions of the mixture and shape them into small meatballs, approximately 1 inch in diameter. You should end up with about 20 meatballs. Place them neatly on a baking sheet lined with parchment paper to keep them from sticking.

Cook the Meatballs: Heat a large skillet over medium heat and add a drizzle of cooking oil to coat the bottom. Once the oil is hot, carefully add the meatballs to the pan in batches, ensuring not to overcrowd them. Cook for about 4-5 minutes on each side, or until they are golden brown and fully cooked through. Once done, transfer the meatballs to a plate lined with paper towels to absorb any excess oil.

Make the Sticky Sauce: In a small saucepan, combine the honey, soy sauce, and rice vinegar. Heat over medium, stirring occasionally until the mixture comes to a gentle simmer. Once simmering, stir in the cornstarch-water mixture and continue cooking for an additional 1-2 minutes, or until the sauce thickens slightly. Remove the pan from heat and set aside.

Coat the Meatballs: In a clean large bowl, place the cooked meatballs and pour the sticky honey soy sauce over them. Gently toss the meatballs in the sauce, ensuring each one is thoroughly coated in the sticky glaze.

Serve: Arrange the sticky honey soy turkey meatballs on a serving platter. Garnish them with a sprinkle of sesame seeds and additional chopped green onions for a pop of color. These nuggets are delightful served warm, alongside rice or presented in crisp lettuce wraps for a fresh, crunchy twist.
