Ingredients

2 ripe avocados

1 can (5 oz) tuna in water, drained

2 tablespoons plain Greek yogurt

1 tablespoon mayonnaise

1 tablespoon Dijon mustard

1 small celery stalk, finely chopped

1 small green onion, finely chopped

1 tablespoon capers, rinsed and finely chopped

Juice of 1/2 lemon

Salt and pepper, to taste

Paprika, for garnish

Fresh parsley, finely chopped, for garnish

Instructions

Prepare the Avocados: Begin by cutting the avocados in half lengthwise. Carefully twist to separate the halves and remove the pits. Using a spoon, gently scoop out a small portion of the avocado flesh to create extra space for the filling; place the reserved flesh into a bowl for later use.

Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna with Greek yogurt, mayonnaise, Dijon mustard, chopped celery, green onion, capers, and the juice of half a lemon. Using a fork, mix the ingredients thoroughly until the mixture is evenly combined and creamy.

Season to Taste: Taste your tuna mixture and season it with salt and pepper according to your preference. If the filling seems too thick or dry, feel free to add a little extra Greek yogurt or mayonnaise to reach your desired consistency.

Incorporate Avocado: Take the reserved avocado flesh you set aside earlier and chop it finely. Gently fold this into the tuna mixture to enhance its creaminess while preserving the avocado's rich flavor.

Stuff the Avocado Halves: Spoon the tuna filling generously into each avocado half, making sure to pack it in well for a delightful presentation. Aim for a nice mound on top for an appetizing look.

Garnish: Lightly dust the tops of the stuffed avocados with paprika for a pop of color and a hint of spice. Then, finish with a sprinkle of freshly chopped parsley for added freshness and visual appeal.

Serve: Carefully transfer the stuffed avocado boats onto a serving platter. They can be enjoyed immediately or chilled in the refrigerator for 15-20 minutes for a refreshing treat.
