    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Ensure all the dry ingredients are thoroughly combined and there are no lumps.

      Combine Wet Ingredients: In a separate medium bowl, crack the egg and beat it slightly. Add the milk, melted unsalted butter, vanilla extract, and lemon zest. Mix these ingredients together until well combined and the mixture is smooth.

        Combine Mixtures: Carefully fold the wet ingredients into the dry ingredients using a spatula or wooden spoon. Take care not to overmix; it's perfectly fine to leave a few lumps in the batter for the best texture.
