1 lb boneless, skinless chicken breasts, thinly sliced

2 ripe peaches, pitted and cut into wedges

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup sweet chili sauce

2 tablespoons soy sauce, divided

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 tablespoon sesame seeds (for garnish)

Salt and pepper, to taste

Fresh cilantro or basil leaves (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken with 1 tablespoon of soy sauce, grated ginger, and a pinch of salt and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes to enhance the flavor while you prepare the other ingredients.

    Prepare the Sauce: In a small bowl, whisk together the sweet chili sauce, rice vinegar, and the remaining tablespoon of soy sauce until well blended. Set aside for later use.
