1 sheet of puff pastry, thawed

2 ripe tomatoes, sliced into rounds

8 oz fresh mozzarella cheese, sliced into rounds

1 tablespoon extra virgin olive oil

2 tablespoons fresh basil, finely chopped (plus extra for garnish)

1 teaspoon balsamic glaze (optional, for drizzling)

Salt and freshly ground black pepper, to taste

1 egg, beaten (for egg wash)

Instructions
 

Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s hot and ready for baking.

    Prepare the Puff Pastry: On a lightly floured surface, gently roll out the thawed puff pastry sheet until smooth and slightly larger. Cut the pastry into 4 equal squares, approximately 4x4 inches each.

      Create the Edges: To form a delightful border, fold the edges of each pastry square inward about 0.5 inches. Use the tines of a fork to press down along the edge, sealing it securely.

        Dock the Pastry: Use a fork to lightly pierce the center of each pastry square several times (this is known as docking) to prevent excessive puffing during baking.

          Prepare the Filling: Drizzle olive oil evenly across each pastry square and sprinkle lightly with salt and freshly ground black pepper. Arrange the sliced tomatoes in a single layer in the center of each tart, and follow with a layer of fresh mozzarella slices, overlapping slightly.
