4 cups ripe watermelon, cut into 1-inch cubes

1 cup creamy feta cheese, crumbled

1/2 cup fresh mint leaves, roughly chopped

1/4 cup red onion, thinly sliced

2 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Sea salt and freshly cracked black pepper, to taste

Optional: 1/4 cup toasted pumpkin seeds, for added crunch and flavor

Begin by preparing the watermelon: Cut the watermelon into 1-inch cubes and transfer them into a large mixing bowl.

    Carefully add the crumbled feta cheese to the bowl, gently folding it in with the watermelon to keep the cheese from breaking apart too much.

      Take the fresh mint leaves, chop them coarsely, and sprinkle them generously over the watermelon and feta mixture for a burst of flavor.
