2 medium zucchinis, grated and excess moisture squeezed out

1 cup sharp cheddar cheese, shredded

4 large eggs

1/2 cup milk

1 cup all-purpose flour

1/4 cup grated Parmesan cheese

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional, for a kick)

1 tablespoon fresh chives, finely chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter, or line it with parchment paper for easier removal.

    Prepare the Zucchini: In a large mixing bowl, grate the zucchinis and then use a clean kitchen towel or paper towels to firmly squeeze out any excess moisture. This step is essential to ensure your breakfast bakes are not soggy.

      Mix Wet Ingredients: In a separate medium bowl, whisk together the eggs and milk until they are well combined and frothy.

        Combine Dry Ingredients: In a third bowl, mix together the flour, baking powder, garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes (if desired) until evenly distributed.
