3 medium zucchinis, thinly sliced

4 medium tomatoes, thinly sliced

1 large onion, thinly sliced

3 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

1 cup breadcrumbs (preferably whole wheat)

1 tablespoon olive oil

1 teaspoon dried Italian herbs (a blend of oregano, basil, and thyme)

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Prepare the Vegetables: In a large mixing bowl, combine the sliced zucchinis, tomatoes, and onions. Add the minced garlic, olive oil, dried Italian herbs, and a pinch of salt and pepper. Toss everything together until all the vegetables are well-coated and evenly seasoned.

      Layer the Bake: Grease a baking dish with a bit of olive oil or cooking spray. Start layering the vegetable mixture by placing a single layer of zucchini slices at the bottom. Next, add a layer of tomato slices followed by the onions. Repeat this process until all the vegetables are used, ensuring the final layer is a beautiful arrangement of tomatoes on top.

        Add Cheese and Breadcrumbs: Sprinkle half of the grated Parmesan cheese over the topmost layer of tomatoes. Next, evenly distribute the shredded mozzarella cheese on top.
