1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions

1 large egg

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional, for heat)

2 tablespoons fresh parsley, chopped

Prep the Zucchini: Begin by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, sprinkle with salt, and let it sit for approximately 10-15 minutes. This will help draw out the excess moisture, ensuring crispy fritters.

    Squeeze Out Water: After the resting period, gather the edges of the towel and twist tightly to extract as much moisture as possible from the zucchini. This step is critical for achieving that desired crispy texture!

      Combine Ingredients: In a large mixing bowl, combine the drained zucchini with flour, Parmesan cheese, chopped green onions, egg, garlic powder, paprika, black pepper, crushed red pepper flakes (if using), and chopped parsley.
