3 medium zucchinis, sliced lengthwise into thin strips

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 cup marinara sauce (your preference: store-bought or homemade)

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Set your oven to preheat at 375°F (190°C) to ensure it's hot and ready for baking.

    Prepare the Zucchini: Arrange the zucchini strips flat on a clean kitchen towel. Sprinkle them lightly with salt, allowing them to sit for about 15 minutes. This process helps draw out excess moisture, which will prevent your rolls from becoming soggy. After 15 minutes, pat the strips dry with another towel.

      Make the Filling: In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, egg, minced garlic, dried oregano, dried basil, and a pinch of salt and pepper. Stir the mixture until all the ingredients are thoroughly combined and creamy.

        Assemble the Rolls: Spread a thin layer of marinara sauce over the bottom of a 9x13 inch baking dish. Take one zucchini strip and place approximately 2 tablespoons of the ricotta filling at one end. Carefully roll the zucchini strip up tightly and place the seam-side down in the baking dish. Repeat this process with the remaining zucchini strips and filling until all are assembled.

          Add Sauce and Cheese: Once all the zucchini rolls are neatly arranged in the baking dish, pour the remaining marinara sauce over the top, ensuring every roll is covered. Sprinkle the remaining shredded mozzarella cheese over the marinara sauce for a delicious cheesy topping.
